Apple Ginger Slaw

Ingredients

For the Slaw:

  • 1 pound shredded cabbage
  • 1 Granny Smith apple, julienned or cut into thin strips
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded carrot

For the Dressing:

  • 1 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lime juice
  • 3 tablespoons fresh grated ginger
  • 2 tablespoons honey
  • 1 tablespoon whole grain mustard

Directions

  1. Prepare the Vegetables:
    • Combine the shredded cabbage, julienned apple, sliced red bell pepper, chopped cilantro, and shredded carrot in a large mixing bowl.
  2. Make the Dressing:
    • In a separate bowl, whisk together the olive oil, apple cider vinegar, lime juice, grated ginger, honey, and whole grain mustard until fully emulsified.
  3. Toss the Slaw:
    • Pour the dressing over the vegetable mixture. Toss well to ensure all the ingredients are evenly coated.
  4. Serve:
    • Let the slaw sit for about 5-10 minutes to allow the flavors to meld. Serve chilled or at room temperature alongside Sticky Garlic Ribs for a fresh and zesty complement.
