Start by arranging 52 briquets in the center of your 22½” Weber Grill. Let them burn for half an hour to ensure a steady and consistent cooking temperature. After this, evenly distribute 26 coals on each side of the grill, placing the grease pan in the middle to catch flavorful drippings. - Seasoning the Ribs:
Take your skinned Baby Back Ribs and generously coat them with Duce's Wild Rib Rub. Ensure that every nook and cranny is covered to infuse each bite with delightful taste. - Cooking the Ribs:
Stand the ribs on a rib rack and place them in the center of the grill. Let them cook for half an hour. Rotate them inside to outside and top to bottom after the initial 30 minutes for even cooking and infusion of the smoky taste. Add the soaked wood chips to each side of the coals and add six briquets to each side to maintain the cooking temperature. Keep a watchful eye on the ribs, checking every 15 minutes for approximately 2 to 2 1/2 hours, or until the ribs are easily penetrated with a fork. - Glazing with Duce’s Wild Competition Barbecue Sauce:
Finally, remove the rib rack and place the ribs top down in the center of the grill. Brush generous amounts of the Competition Barbecue Sauce onto the ribs, allowing the sauce to caramelize for an additional 10 minutes. Be sure to turn the ribs over once for an even coating.
