Honey Kissed Cornbread

Ingredients

FOR THE CORNBREAD

  • 1.25 lbs Yellow Cornmeal
  • 1.25 cup All-Purpose Flour
  • 2 cups Milk
  • 4 Eggs
  • 1 cup Buttermilk
  • 0.5 tsp Salt
  • 4 fl oz Canola Oil
  • 1/2 tbl Baking Soda
  • 1.25 cup Sugar
  • 8 oz Shredded Cheddar Cheese

FOR THE GLAZE

  • 1 cup Honey
  • 6 oz Butter

Now that we've got everything ready, let's dive into the preparation!

  1. Preheat your oven to 250 degrees Fahrenheit.
  2. Sift together the dry ingredients (cornmeal, all-purpose flour, salt, baking soda, sugar).
  3. In a separate bowl, combine all the wet ingredients (milk, eggs, buttermilk, canola oil).
  4. Gradually mix the wet ingredients into the dry ones. Stir until just combined.
  5. Stir in the shredded cheddar cheese.
  6. Fill the batter 2/3 of the way into a muffin tin.
  7. Bake for 12-15 minutes or until the tops are brown and a toothpick inserted in the middle comes out clean.
  8. For the Glaze:
    While the muffins are baking, melt the butter and combine it with the honey. You may want to thin the honey with a little water for even brushing.
    When the muffins are done baking, immediately brush them with the melted butter and honey mixture.
    Let the muffins cool for a bit before serving. Enjoy your Honey Kissed Cornbread!
