Honey Kissed Cornbread
Ingredients
FOR THE CORNBREAD
- 1.25 lbs Yellow Cornmeal
- 1.25 cup All-Purpose Flour
- 2 cups Milk
- 4 Eggs
- 1 cup Buttermilk
- 0.5 tsp Salt
- 4 fl oz Canola Oil
- 1/2 tbl Baking Soda
- 1.25 cup Sugar
- 8 oz Shredded Cheddar Cheese
FOR THE GLAZE
- 1 cup Honey
- 6 oz Butter
Now that we've got everything ready, let's dive into the preparation!
- Preheat your oven to 250 degrees Fahrenheit.
- Sift together the dry ingredients (cornmeal, all-purpose flour, salt, baking soda, sugar).
- In a separate bowl, combine all the wet ingredients (milk, eggs, buttermilk, canola oil).
- Gradually mix the wet ingredients into the dry ones. Stir until just combined.
- Stir in the shredded cheddar cheese.
- Fill the batter 2/3 of the way into a muffin tin.
- Bake for 12-15 minutes or until the tops are brown and a toothpick inserted in the middle comes out clean.
- For the Glaze:
While the muffins are baking, melt the butter and combine it with the honey. You may want to thin the honey with a little water for even brushing.
When the muffins are done baking, immediately brush them with the melted butter and honey mixture.
