Lemon Herb Marinated Chicken Ka-Bobs

Ingredients
FOR THE MARINADE
- Juice and zest of 4 lemons, plus 2 whole lemons
- 2 tbl red wine vinegar
- 5 sprigs fresh oregano, finely chopped
- 5 sprigs fresh Italian parsley, finely chopped
- 5 sprigs fresh thyme, finely chopped
- 3 cloves of garlic, smashed and finely chopped
- 1/2 tsp crushed red pepper
- 1 tbl kosher salt
- ½ tbl cracked black pepper
- 1 tbl sugar
FOR THE CHICKEN KA-BOB
- 1.5 lbs trimmed and cubed chicken breast (cut into 16 1.5oz cubes)
- 1 large red bell pepper cut into cubes
- 1 large green bell pepper cut into cubes
- 1 large yellow bell pepper cut into cubes
- 1 large red onion cut into cubes
- 4 10-inch skewers, metal or wooden (need to soak wood skewers)
- 1 cup Duce’s Wild Alabama White Gold

DIRECTIONS FOR THE MARINADE
- Combine all ingredients in a mixing bowl and whisk together. Refrigerate for 1 hour.
DIRECTIONS FOR THE CHICKEN KA-BOB
- Preheat grill to medium high heat.
- Assemble kabobs alternating onion, all 3 peppers and chicken, and repeat.
- Marinade kabobs for at least 30 minutes in the marinade (up to 3 hours)
- Grill on high heat for about 20 minutes rotating the kabob on all sides.
- When kabobs are just about finished cooking, brush with the Duce’s Wild Alabama White Gold and serve.
