Root Vegetable Chicken Roulade

Ingredients
- 4 4oz boneless skinless chicken breasts
- 2 oz parsnips, julienned
- 1 oz carrots, julienned
- 1 oz red onion, julienned
- 1 tbl house blend seasoning (garlic powder, salt and pepper)
- 1 tsp Duce’s Wild Poultry Rub
- 1 cup Duce’s Wild Alabama White Gold
- ¼ cup Duce's Wild DQ Glaze
Directions
- Lightly pound out the chicken breast, season with house blend
- Fill chicken breast with fresh julienned vegetables.
- Roll the breast around the vegetables
- Season top of the roulade with the Poultry Rub
- Smoke at 350 degrees for 10 minutes
- Brush with the Alabama White Gold and cook for 5 more minutes
- Drizzle with the DQ Glaze to finish
